Grilled Fish with Mussels:
Ingredients (Serves 2):
4 fillets white fish 6-8 mussels Juice of 1 lemon 2 tbsp chopped tomatoes1 tsp caster sugar 1 tsp ginger Coriander, chopped Sesame oil Chili sauce 200g rice 2 g saffron 3 liters water
Preparation:
Mix the lemon juice, coriander, oil and chili sauce together in a small saucepan and heat gently for five minutes. Cook rice as normal, stirring saffron into the cooking water, then cover. Grill fish for five minutes. Grill mussels until open, discarding any that do not open. Serve fish and mussels together, covered in sauce, garnish with a few coriander leaves. Accompany with saffron rice."
