ISTANBUL, Turkey - Up a side street near the labyrinth of the Grand Bazaar, in the corner shop of a building that long ago served as a trading post for desert caravans, the apple tea arrives on a silver tray.
An assistant produces a knee-high table from behind a shelf. Across the barren showroom, the shop owner, who introduces himself as Karnash, moves his hand in a sweeping gesture of welcome, an invitation to sit and sip a while. "
