Leg of Lamb with marinade:
Ingredients (Serves 4):
1 leg of lamb, weighing around 2 kg, boned and tied with string 3 tablespoons oil 25g butter
For the Marinade:
4 glasses of red wine 3 chopped carrots 2 onions, in skins 3 cloves 2 milled pepper 2 stick celery Thyme, bay leaves, salt and black pepper 3-4 cloves garlic 1 glass red wine vinegar 1 teaspoons ground coriander "
