So much more than kebabs: Top chef Allegra McEvedy on Turkey

In Britain, the closest many of us come to Turkish cuisine is at the end of a boozy night when only a kebab will do.
In Turkey, hunger might be sated with a 'silky soft' warm yoghurt soup with chicken and mint or a delicate cheese pastry, an irony that did not escape chef Allegra McEvedy.
