Wandering the streets of Istanbul’s tourist district of Sultanahmet, you might be forgiven for thinking that residents of this city subsist on little more than lamb and sticky sweets. Cafes and shops advertise kebabs, baklava, doner sandwiches, the omnipresent Turkish delight, Turkish pizza—and not much else.
