Kemal Gorgun took the shiny young branch of an apple tree in his thick hand and tried to show me what to do with it. He bent it down, then released it, explaining how I would know whether to let the shoot grow skyward or to tether it horizontally to one of the metal cords that ran the length of the green orchard. His instructions were perfectly clear — except that he was speaking Turkish, and I couldn’t understand a thing he was saying."
