Yaprak Sarması (Cheese in Vine Leaves):
The malty, sour taste of vine leaves lends itself to many dishes. Here cubes of beyaz peynir or feta are simply wrapped up in vine leaves, threaded on kebap skewers and grilled over hot charcoal. The crispy-coated vine leaves and melted cheese are then immediately eaten with lemon squeezed over them.
Çiğ Köfte (Spicy Tartare Meatballs):
A specialty from southeastern Turkey, these raw meatballs are reputed to often contain 30 different spices. They are so well kneaded and pounded that the meat content is almost undetectable. They are usually served with lots of fresh parsley to cut the spice."
